Balsamic vinegar

A dark, sweet-tart vinegar that adds depth to dressings, roasted vegetables, and reductions.

What to look for

Everyday balsamic vinegar should list grape must and vinegar near the top. Thick balsamic glaze is sweetened and reduced, not the same product.

Store it thoughtfully

Cap tightly in a cool cupboard. Crystals or sediment can appear over time without necessarily indicating spoilage.

How to use it

Whisk into vinaigrette, splash over roasted vegetables, or reduce gently while watching closely. Its color can darken pale foods.

When you need a substitute

Red wine vinegar plus a tiny amount of honey can approximate sweet-tart balance but not the same aroma. Glaze requires a much smaller quantity.

A common pitfallA reduction goes from syrupy to burned quickly; remove it while it is still slightly thinner than the cooled texture you want.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
