GOOD FOOD STARTS WITH A LITTLE CURIOSITY.

Seasonings

Black pepper

A warm, pungent spice whose aroma is strongest soon after the peppercorn is cracked.

What to look for

Whole peppercorns retain aroma longer; pre-ground pepper is convenient but fades faster. A simple adjustable grinder covers most needs.

Store it thoughtfully

Keep sealed away from stove heat, steam, and sunlight. Refill a grinder in small amounts so the rest stays protected.

How to use it

Grind early for a mellow cooked warmth or at the end for a brighter bite. Add a little, taste, and remember that coarser grinds feel more intense in a bite.

When you need a substitute

White pepper has a different earthy aroma; red pepper adds heat rather than peppery fragrance. Neither duplicates black pepper.

A common pitfallA grinder set too coarse can leave harsh pebbly bursts instead of evenly seasoning the food.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
