Breadcrumbs

Dry or fresh crumbs used for crisp coatings, tender meat mixtures, toppings, and binding.

What to look for

Panko gives a coarse, airy crunch; fine dry crumbs coat more evenly. Seasoned crumbs already contain salt and herbs.

Store it thoughtfully

Keep dry crumbs sealed; refrigerate or freeze fresh homemade crumbs. Discard any package with moisture or off odors.

How to use it

Press onto a lightly moistened surface for coating, toast in oil for topping, or hydrate before mixing into meatballs. Brown gently because small crumbs scorch fast.

When you need a substitute

Crushed crackers add salt and fat; oats give a coarser binder. Gluten-free crumbs work when their label and the rest of the dish meet the need.

A common pitfallPouring crumbs used near raw meat back into the original container can contaminate the whole package.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
