Carrots

Sweet, earthy roots that add crunch raw and mellow flavor when roasted, simmered, or sautéed.

What to look for

Select firm carrots with smooth skin and no slimy patches. Carrots sold with tops should have the greens removed before storage.

Store it thoughtfully

Refrigerate dry in a produce bag or covered container. Keep them away from excess moisture and ethylene-producing fruit when possible.

How to use it

Scrub or peel, then cut evenly. Thin slices cook quickly in a sauté; larger pieces need time to become tender in stews and roasts.

When you need a substitute

Parsnips are earthier and starchier; sweet potato is softer and sweeter. Adjust cooking time for the new size and vegetable.

A common pitfallLarge carrot chunks added late to soup can stay hard after the rest of the ingredients are done.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
