Chicken thighs

Flavorful dark meat suited to roasting, braising, grilling, and forgiving weeknight cooking.

What to look for

Bone-in, skin-on thighs brown well and take longer; boneless, skinless thighs are faster. Choose similar sizes for consistent doneness.

Store it thoughtfully

Keep refrigerated in its package on a low shelf and use or freeze by the labeled date. Thaw in the refrigerator, not on the counter.

How to use it

Start skin-side down in an appropriate pan for crisp skin, or braise gently until tender. Poultry must reach at least 165°F / 74°C in the thickest part.

When you need a substitute

Chicken breast is leaner and can dry out with thigh timing. Drumsticks are closer in flavor but include more bone and cook differently.

A common pitfallCrowding wet thighs in a skillet steams the skin; dry them and leave enough space to brown.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
