Coconut milk

A rich liquid pressed from coconut flesh, used in curries, soups, rice, sauces, and desserts.

What to look for

Canned coconut milk is richer than refrigerated coconut beverage. Full-fat gives more body; light coconut milk is thinner.

Store it thoughtfully

Shake unopened cans if the recipe needs an even consistency. Transfer leftovers to a covered container, refrigerate promptly, and use according to the label.

How to use it

Stir separated cream and liquid together, then simmer gently. Add acidic ingredients carefully because strong boiling can make the sauce look oily or broken.

When you need a substitute

Dairy cream changes flavor and is unsuitable for vegan or milk-free needs. Cashew cream can provide richness but introduces tree nuts.

A common pitfallBuying sweetened cream of coconut instead of unsweetened coconut milk can turn a savory dish dessert-sweet.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.

Cook with it.
