Seasonings

Ground cinnamon

A sweet-smelling bark spice used in baking, breakfast dishes, drinks, and many savory cuisines.

What to look for

Cassia cinnamon is bold and common; Ceylon cinnamon is lighter and more floral. Fresh powder should smell fragrant immediately.

Store it thoughtfully

Keep airtight and away from heat. Replace it when the scent becomes faint even if the jar is not empty.

How to use it

Whisk it through dry ingredients to prevent streaks, or bloom a small amount in fat for savory dishes. Add gradually because it can taste woody in excess.

When you need a substitute

Pumpkin-spice blends contain cinnamon plus other spices and change the flavor balance. Nutmeg is stronger and not a direct replacement.

A common pitfallDumping ground cinnamon onto a cold drink leaves floating clumps because the powder does not readily dissolve in water.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
