Heavy cream

High-fat dairy that enriches sauces, whips into soft peaks, and gives desserts a smooth body.

What to look for

Heavy cream or heavy whipping cream usually contains enough fat to whip; lighter cream may not. Check the date and carton seal.

Store it thoughtfully

Keep cold at the back of the refrigerator and close the carton well. Freeze only when the later use can tolerate texture changes.

How to use it

For whipped cream, chill the cream and bowl and stop when the desired peaks form. For pan sauces, simmer gently rather than boiling aggressively.

When you need a substitute

Half-and-half makes a thinner sauce and will not whip the same way. Coconut cream adds coconut flavor and behaves differently with acid.

A common pitfallOverwhipping turns smooth cream grainy and eventually into butter; slow down as it thickens.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
