Milk

A versatile liquid that adds moisture, protein, and browning to sauces, batters, doughs, and custards.

What to look for

Whole milk gives more richness than reduced-fat milk. Plant beverages vary in sugar, protein, and stabilizers and may behave differently when heated.

Store it thoughtfully

Keep refrigerated at 40°F / 4°C or below and return it promptly after measuring. Do not rely on smell alone beyond safe storage guidance.

How to use it

Heat gently for sauces and stir the bottom so proteins do not scorch. In baking, use the fat level and temperature the recipe requests.

When you need a substitute

Unsweetened soy beverage is closer in protein for some recipes; oat and almond beverages can be thinner. Evaporated milk needs dilution when replacing regular milk.

A common pitfallBoiling milk hard in a thin pan can scorch the bottom and spill over suddenly.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
