Pearl barley

A polished barley grain with a pleasantly chewy texture for soups, bowls, and pilafs.

What to look for

Pearl barley cooks faster than hulled barley because more bran is removed. It still contains gluten despite its rice-like appearance.

Store it thoughtfully

Keep dry barley sealed in a cool cupboard. Refrigerate cooked barley promptly and add a little liquid when reheating.

How to use it

Rinse, then simmer until tender but chewy, following the package ratio. In soup, allow room for it to absorb liquid and continue swelling.

When you need a substitute

Farro gives a similar chew but has its own timing; brown rice is gluten-free only when handled and labeled appropriately. Neither is an exact swap.

A common pitfallAdding too much barley to soup can turn a brothy pot into a thick stew after it rests.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
