Potatoes

Starchy tubers whose variety determines whether they bake fluffy, hold shape, or mash creamy.

What to look for

Russets are fluffy and good for baking; waxy red or yellow potatoes hold shape; Yukon Golds sit between. Avoid green skin, deep sprouts, and soft wet spots.

Store it thoughtfully

Keep unwashed potatoes in a cool, dark, ventilated place, separate from onions. Do not refrigerate raw potatoes unless local guidance specifically recommends it.

How to use it

Cut pieces to a similar size, start boiling potatoes in cold salted water, and drain well. For roasting, dry the surface and leave space on the pan.

When you need a substitute

Sweet potatoes are sweeter and cook differently. Cauliflower can mimic part of a mash but does not replace potato starch in every recipe.

A common pitfallBlending cooked potatoes at high speed releases too much starch and turns mash gluey.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
