Sesame oil

An aromatic oil that adds toasted, nutty fragrance to stir-fries, noodles, marinades, and dressings.

What to look for

Dark toasted sesame oil is a finishing seasoning; pale untoasted sesame oil is milder and used differently. Read the label before pouring.

Store it thoughtfully

Keep tightly capped away from heat and light; refrigerate if the label recommends it. Smell before use because aromatic oils can become rancid.

How to use it

Add toasted sesame oil in small amounts near the end of cooking or in a dressing. Measure rather than free-pouring until you know its strength.

When you need a substitute

A neutral oil can replace cooking function but not sesame flavor. A small amount of tahini adds sesame character but also thickens the dish.

A common pitfallUsing toasted sesame oil as the main high-heat frying oil can overwhelm food and waste its aroma.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
