Vegetable broth

A plant-based savory liquid for soups, grains, sauces, and dishes that need gentle depth.

What to look for

Look for a low-sodium version whose dominant vegetables fit your dish. Some broths are tomato-heavy or sweet from carrots.

Store it thoughtfully

Refrigerate opened broth as directed and do not keep it simply because it still smells normal. Freeze measured leftovers for later use.

How to use it

Taste first, then add to risotto, lentils, soup, or pan sauces. Simmering it down strengthens both flavor and salt.

When you need a substitute

Chicken broth works when animal products are acceptable; water plus well-cooked aromatics may be better than a strongly flavored broth in delicate dishes.

A common pitfallAssuming every vegetable broth is vegan or allergen-free can be risky; verify the actual label.

Substitutions change flavor, texture, and sometimes safety or structure. Check the recipe and product labels, especially for dietary needs.
