What to look for
Look for a comfortable handle, a manageable blade length, and balanced weight. An 8-inch / 20 cm blade is common, but a smaller one may feel better. Try the grip when possible.
How to use it
Use a stable board and a tucked-finger guiding hand.
Slice with controlled strokes rather than forcing the blade.
Use kitchen shears or the right specialty tool for bones and frozen foods.
Make it last
Hand-wash, dry immediately, and store in a knife guard, block, or rack. Hone as appropriate and sharpen when the edge no longer cuts cleanly.
Follow the manufacturer’s instructions for your particular tool. This is general educational guidance, not a hands-on product review.
